Editor’s Note: This article discusses a London-based project that turns discarded chicken feathers into edible proteins. The company behind the project, Kera Protein Ltd., uses a 13-step hydrolysis process to convert waste from the poultry industry into fake meat. The feather-meat protein could help address the issue of excess waste in the food industry, where millions of tons of poultry feathers are wasted each year. Kera’s latest collaboration is with a London-based Thai supper club, showcasing the versatility of the chicken feather protein product through various dishes. The aim is to change cultural perceptions towards alternative and sustainable protein sources and challenge stereotypes about waste management. The production costs and scaling up of the project are challenges being addressed by Kera. The project also aims to address the environmental impact of poultry waste on rivers in the UK. Kera is in the process of securing the Novel Foods EU Certification for its products.
